How to cook okra

Green okra with chicken and tomatoes

How to prepare

Okra preparation:

  • Put the coriander, salt, and black pepper on the chicken pieces, and leave them until the chicken absorbs all the spices, then set them aside.
  • Put the butter or ghee in a large pot, then place it over a strong heat until the butter melts and heats up well.
  • Add the chicken pieces to the butter and stir gently until the chicken absorbs the taste of the butter and spices.
  • Add chopped onions and garlic cloves to the chicken, stirring constantly until their aroma appears, then add pepper to the mixture, stirring continuously for several seconds.
  • Add okra to the chicken mixture, stirring gently until the okra absorbs the taste of chicken, onions, and garlic.
  • Reduce the heat to the pot, and leave the okra for a few minutes until it wilts.
  • Prepare tomato juice by putting tomatoes and lemon juice in an electric mixer, and running it on high speed.
  • Add tomato juice, coriander, and basil to the bowl and cover it.
  • Leave the pot over a medium heat until the chicken and okra are cooked.

Prepare the garlic mixture:

  • Put the ghee in a deep saucepan, saute the meat until browned, and then remove it from the pot, and set it aside.

Okra mixture:

  • Add garlic to the pot, and stir until it turns golden, then add okra and stir over a high temperature until it becomes soft and yellowish.
  • Put the tomatoes in the jug of the blender and run it on medium speed until the tomato juice is formed, then add it to the okra, and then add the meat, the lomi, the tamarind, and the broth.
  • Cover the pot and leave it on a medium heat until the okra is cooked, and a thick broth is formed.
  • Pour the okra into a deep serving dish and serve it with vermicelli rice.

  • Add the okra and stir it with the meat, then add a little broth, and leave it for several minutes until the okra absorbs the broth.
  • Put the tomatoes in the jug of the blender to squeeze them.
  • Add the rest of the stock, tomato juice, tomato paste, and pepper pods to the okra.
  • Leave the okra on a low heat until it is well coated, and then serve.
