How to cook lamb ribs

Rib with Bukhari Rice

the components

  • A rib of lamb.
  • Two tablespoons of cumin.
  • a tablespoon of salt.
  • 1 teaspoon each of:
    • paprika;
    • Pepper.
    • cardamom.
  • Fried nuts – for garnish.

Rice Ingredients:

  • Five cups of long-grain basmati rice.
  • Three large grated carrots.
  • Half a cup of corn oil.
  • Half a cup of raisins.
  • Chopped large onion.

 

How to prepare

  • Put the black pepper, cardamom, salt, paprika and cumin in a small bowl and mix well.
  • Put half a cup of corn oil in a wide saucepan and raise it over the fire until the oil heats up well, then add the onions and stir over the fire until it wilts and add half the amount of spice and onions to it.
  • Add the carrots to the pot and stir well with the spices until the rice acquires a delicious flavor.
  • Add half the amount of raisins, then add the rice and stir well for several minutes until the rice is browned on the fire well, stir the ingredients with the rice and leave it on a high heat until it boils well, reduce the fire and leave it on the fire until the rice is cooked.
  • Put a piece of tin foil on a wide tray and place the lamb rib on it, distribute the rest of the spices on the inside and outside of the rib and pour the rice over the rib and fix it well.
  • Drizzle a little olive oil over the rib and cover it well with tin foil.
  • Prepare the oven by placing it at a temperature of 180 degrees Celsius and inserting the ribs into the oven for two and a half hours until they are cooked and reduce the oven temperature until serving time, then distribute the nuts on it and serve it with rice.

 

Vegetable stuffed rib

Filling Ingredients:

  • A tablespoon of mixed spice.
  • A piece of ginger .
  • a tablespoon of salt.
  • Ten cloves of garlic.
  • A tablespoon of ground black pepper.
  • big onion.
  • Two cups of chopped parsley.
  • A large sweet green pepper.
  • Half a cup of olive oil .
  • Two cups of chopped dill.
  • Two cups of chopped coriander.

Vegetable Mix Ingredients:

  • Four large carrots.
  • Four pods of green pepper.
  • Four large grains of potatoes .
  • Twenty cloves of garlic , not peeled.
  • Twenty small eggplant .
  • A piece of yellow squash (squash).
  • Four pods of green pepper.
  • Thirty very small onions.

 

How to prepare

  • Prepare a suitable baking tray, and cover it with tin foil, keeping a portion of the tin foil outside the tray, enough to cover the lamb rib.

Prepare the filling:

  • Put salt, pepper, pepper, onion, garlic, ginger, dill, coriander and parsley in a food processor bowl and run on medium speed until ingredients are mixed and homogeneous.
  • Put a third of the filling on the rib and rub it well, inside and out, and put a little of the filling between the meat and the skin.

Prepare the vegetable mixture:

  • Chop the squash, potatoes, and carrots into medium-sized cubes and put them in a deep bowl, chop the eggplant longitudinally from the middle and leave the neck so that the eggplant remains cohesive and put it on top of the potatoes.
  • Add garlic, pepper, and onion and put the rest of the filling on the vegetables and mix well.
  • Put the filling inside the rib between the meat and the skin, distribute the rest of the quantity under the rib and wrap it in tin foil, then put it in a hot oven at a temperature of 180 degrees Celsius for three hours until it is completely cooked and then serve.
